Use of chitosan for selective removal of β-lactoglobulin from whey

Аннотация:
The biopolymer is characterized as either chitin or chitosan according to the degree of deacetylation (DD) which is determined by the proportion of D-glucosamine and N-acetyl-D-glucosamine. Whey contains a heterogeneous mixture of proteins with a wide range of functional properties and with application not only for the food industry but also for the chemical, pharmaceutical and cosmetic industries.
